Overnight Vanilla Cinnamon Oats

Waking up to a delicious breakfast ready made makes me so incredibly happy. Not to mention it helps me get to work on time! Try out this overnight oats/soaked oats [otherwise known as Bircher Muesli or Swiss Muesli]!



Ingredients:


Serves 4 2 cups whole oats Juice from 2 fresh oranges 1 cup unsweetened vanilla almond milk [or milk of your choice]* *make sure liquid is enough to just cover the dry ingredients as it will soak up 2 Tbsp ground flaxseed 2 Tbsp chia seeds 1/2 cup nuts of your choice [I did 1/4 cup almonds, 1/4 cup walnuts] 2 tsp vanilla extract Decent sprinkling of cinnamon


Toppings:


Fresh berries A few decent spoonfuls of plain Greek Yogurt Sprinkling of extra cinnamon and a drizzle of honey if you like extra sweetness [the OJ already provides some sweetness].


Directions:


1. Add all ingredients [except toppings] into a large sealable tupperwear container. Combine everything thoroughly, ensuring all dry ingredients are well coated by wet ingredients. 2. Place container in the fridge to soak over night. In the morning scoop servings out [approx 3/4 cup per serve], top with the Greek yogurt, fresh berries and cinnamon!
